Making organic apple cider
At Juliet®, making organic apple cider means above all respecting the apple and nature. It all starts in our organic orchards, where Juliet® apples grow without pesticides or chemical fertilisers. They are picked when ripe, just at the right time, when they have developed their full flavour.
Once they've been sorted, they head off to the production site, ready to be transformed into high-quality organic cider. They are then gently washed to preserve their purity, before being crushed to extract a rich, concentrated juice. An essential stage follows: the apples are macerated. For around an hour, their natural aromas develop, intensifying the flavour complexity of the future Juliet® organic apple cider. Then comes the pressing, a key phase in which the fruit releases all its rich juice. This precious nectar is then left to macerate for ten days, a crucial stage for developing the aromatic nuances and preparing for fermentation.
Fermentation, the heart of the process, is meticulously monitored. At this stage, the natural sugars in Juliet® organic apples are transformed into alcohol. To preserve the freshness and complexity of the flavours, the temperature is kept at a precise level. This rigorous control guarantees a balanced organic apple cider that retains all the intensity of the fruity aromas.
Once fermentation is complete, our organic cider is carefully filtered and then bottled. The 75cl Champagne-style bottles are corked and muzzled to protect the natural sparkle and ensure optimum enjoyment. Each bottle is pasteurised and labelled before it reaches the point of sale, demonstrating our attention to detail.
