- 1 500 g fresh foie gras
- 2 Juliet® apples
- 100 g brown sugar
- 50 g butter
- 2 pinches 5-spice mix
- 5 cl calvados (optional, for flambé)
- Salt and freshly ground pepper
Preparation
1. Prepare the foie gras
Soak the foie gras in fresh water for at least 2 hours.
2. Caramelise the apples
Cut the Juliet® apples into quarters and fry gently in the butter and sugar.
Add the 5-spice mixture and stir gently.
When the wedges are cooked (a nice amber colour), you can flambé them with calvados.
3. Preheat the oven
Preheat your oven to 90°C.
4. Prepare the assembly
Meanwhile, remove the foie gras from the fresh water and carefully devein it.
Season all sides of the lobes with salt and pepper to taste.
In a terrine, alternate layers of foie gras, apples and foie gras. If necessary, cut the liver into pieces to distribute everything evenly and obtain a nice, even texture.
5. Cooking the terrine
Close the terrine and bake for 110 minutes at 90°C.
After cooking, leave to cool to room temperature.
6. Chilling and resting
Pour off any fat that is still liquid.
After cooling, place your terrine in the fridge, taking care to place a weight on top so that the foie gras is well compacted (a wooden board wrapped in cling film, for example).
Leave to rest for at least 6 hours.
Before serving, remove the weight and add a little of the fat that you have reheated to make it liquid.
Return to the fridge and leave to rest for at least 48 hours before serving.
7. Tasting
Serve chilled, with a slice of toast and a pinch of fleur de sel.
