Juliet® Guinea Fowl and Apple Casserole
Ingredients- 6 Juliet® apples
- 1 kg guinea fowl, cut into pieces
- 3 onions
- 25 cl chicken stock
- 20 cl double cream
- 35 g semi-salted butter
- A few sage leaves
- Salt and freshly ground pepper
- Prepare the ingredients
Let's go ! Preheat the oven to 180°C, and while you're waiting for it to heat up, get busy with the onions.
- Brown the guinea fowl
Take out the guinea fowl pieces and brown them gently in a casserole dish with a knob of butter. Allow them to turn a lovely golden colour on all sides, for added flavour! A little tip: don't stir too often, as this will help to achieve a nice colour and make this recipe perfect.
- Add the herbs
Add the onions and stir gently. They should become translucent, a sign that they are well browned. Season generously with salt and pepper, then pour in the chicken stock. For an even more delicious flavour, add a few sage leaves.
- Baking in the oven
Now, cover the casserole and head for the oven for 1 hour of cooking. There's no need to keep an eye on it all the time, as the guinea fowl will slowly macerate in its juices and become ultra-soft, a key stage in the success of this recipe. - Add the Juliet® apples
While the guinea fowl is simmering quietly, the Juliet® apples are taken care of: peel them, remove the seeds and cut them into quarters. Then slip them into the casserole dish 20 minutes before the end of the cooking time. They will gently caramelise with the cooking juices and add a slightly acidic touch, perfect for balancing this recipe for guinea fowl with apples.
- Binding the sauce
It's almost ready! Take the casserole out of the oven and put it back on a low heat. Pour in the crème fraîche and stir gently. If you prefer a smooth sauce, strain it through a fine sieve before coating the guinea fowl.
- Savour
All that's left to do is enjoy this guinea fowl with apples recipe piping hot, with homemade mashed potatoes or a few steamed potatoes.Ideal for a warm meal with family and friends.
Bon appétit!
